Homemade Zucchini Bread

Moist, tender, and warmly spiced, this Farm2Flour Zucchini Bread is a simple loaf that delivers amazing flavor. Made with our freshly stone-milled Organic All-Purpose Flour, it has a soft crumb, subtle cinnamon flavor, and just the right amount of sweetness. 

Ingredients

Dry Ingredients

  • 2 cups Farm2Flour All-Purpose Flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

Wet Ingredients

  • 2 large eggs, room temperature
  • ¾ cup sugar
  • ½ cup unsalted butter, melted
  • ¼ cup milk
  • 1 teaspoon vanilla extract

Add-Ins

  • 1 ½ cups finely grated zucchini, lightly packed (do not squeeze out moisture)
  • Optional: ½ cup chopped walnuts or chocolate chips

Directions:

  1. Preheat the Oven: Preheat oven to 350°F. Grease or line a loaf pan with parchment paper.

  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

  3. Mix Wet Ingredients: In a separate large bowl, whisk the eggs, sugar, melted butter, milk, and vanilla extract until smooth and well combined.

  4. Add Zucchini: Stir the grated zucchini into the wet mixture until evenly distributed.

  5. Combine: Add the dry ingredients to the wet ingredients and mix just until combined.

  6. Rest the Batter: Let the batter rest for 15 minutes.

  7. Bake: Pour batter into the prepared loaf pan. Sprinkle with optional toppings if using. Bake for 45–60 minutes. Tent loosely with foil after 40 minutes if the top is browning too quickly.

  8. Cool: Let cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely.
