These French Toast Protein Pancakes bring the classic cinnamon and vanilla flavor of French toast into a high-protein, lower-fat stack made with our freshly stone-milled organic all-purpose flour. They’re balanced, satisfying, and built with real ingredients — no shortcuts required.

Dry Ingredients

1 scoop protein powder (20–25g protein per scoop)

Wet Ingredients
- 1 cup liquid egg whites

½ cup nonfat Greek yogurt
- ¾ cup whole milk
- 1 tsp vanilla extract
Directions:

Mix Dry Ingredients: In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, salt, and cinnamon.

Mix Wet Ingredients: In a separate bowl, whisk the egg whites, Greek yogurt, whole milk, and vanilla extract until smooth.
- Combine: Add the dry ingredients to the wet ingredients and stir gently just until combined. Avoid overmixing.
- Rest the Batter: Let the batter rest for 5 minutes to allow the flour to fully hydrate and create a tender texture.
- Preheat the Pan: While the batter rests, heat a lightly sprayed nonstick skillet or griddle over low-medium heat.
- Cook: Scoop ¼ cup of batter onto the heated skillet for each pancake. Cook until bubbles form and edges are set. Flip and cook until golden brown and cooked through.
