Classic Shortbread Cookies

These classic shortbread cookies prove that simple ingredients make the best baking. Made with our freshly stone-milled organic all-purpose flour, they bake up tender, delicate, and lightly golden with that signature shortbread texture throughout.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups Farm2Flour All-Purpose Flour
  • ¼ tsp salt
  • 2 tsp cornstarch

Directions:

  1. Cream the Butter: In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter until smooth and creamy, about 2 minutes.

  2. Add Sugar & Vanilla: Mix in the powdered sugar and vanilla extract until light and fluffy.

  3. Add Dry Ingredients: Add the flour, salt, and cornstarch. Mix just until combined. Do not overmix — this keeps the cookies tender.

  4. Chill the Dough: Press the dough into a disk, wrap tightly, and chill for 30–45 minutes to prevent spreading.

  5. Roll & Cut: Roll the dough to about ¼ inch thick on a lightly floured surface. Cut into shapes or simple rectangles.

  6. Bake: Bake at 325°F for 12–15 minutes, until the edges are lightly golden while the tops remain pale.

  7. Cool: Let cool completely before moving. The cookies will firm up as they cool.
