These Apple Pie Bars are everything you love about warm, cinnamon-spiced apple pie — but easier to make, easier to slice, and perfect for sharing. The crust and crumble are made best with our freshly milled Organic Pastry Flour, giving every layer a tender, melt-in-your-mouth texture.

The filling bakes into soft, juicy apples wrapped in warm spices, while the buttery crumble on top turns golden and crisp. Every bite tastes like pure fall comfort: cozy, sweet, and delicious.

Ingredients

Crust and Topping

  • 3 cups Farm2Flour Fresh Pastry Flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 1 large egg
  • 1 teaspoon vanilla extract

Apple Filling

  • 6 cups peeled, cored, thinly sliced apples (about 5-6 medium; a mix of tart + sweet is ideal)
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 tablespoons Farm2Flour Fresh Pastry Flour
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • Pinch of salt

Optional Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • ½ teaspoon vanilla

Directions

    1. Preheat oven: Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and lightly butter it.

    2. Mix Dry Ingredients (Crust/Topping): In a large bowl, whisk together the pastry flour, sugar, baking powder, and salt.

    3. Cut in Butter: Add the cold cubed butter and cut it into the dry ingredients using your fingertips, a pastry cutter, or a food processor until the mixture resembles coarse, sandy crumbs.

    4. Add Egg and Vanilla: Mix in the egg and vanilla until the dough begins to come together in soft clumps. Do not overmix.

    5. Form Crust: Press two-thirds of the dough evenly and firmly into the bottom of the prepared pan to form the crust. Reserve the remaining third for the crumble topping.

    6. Make Apple Filling: In a large bowl, combine the sliced apples with both sugars, pastry flour, cinnamon, nutmeg, lemon juice, and a pinch of salt. Toss until apples are evenly coated and glossy.

    7. Assemble: Spread the apple filling evenly over the crust. Crumble the remaining dough on top, squeezing some pieces into larger chunks for texture.

    8. Bake: Bake for 45–55 minutes, or until the top is lightly golden and the apples are bubbling around the edges.

    9. Cool: Allow the bars to cool in the pan for at least 1 hour. For cleaner slices, chill in the fridge for 20–30 minutes before cutting.

    10. Optional Glaze: Whisk together powdered sugar, milk or cream, and vanilla until smooth. Drizzle over completely cooled bars.
