Einkorn Cinnamon Rolls

Soft, gooey, and sweet — these Einkorn cinnamon rolls bring out the buttery richness and warm spice you crave, with the deep, nutty flavor that only fresh, stone-milled Organic Einkorn Flour can deliver.

Ingredients

Dough

  • 1 cup warm whole milk (110°F)
  • 2¼ tsp active dry yeast (1 packet)
  • ½ cup granulated sugar
  • ⅓ cup melted butter
  • 2 large eggs, room temperature
  • 1 tsp salt
  • 4 cups Farm2Flour Einkorn flour

Filling

  • 1/2 cup softened salted butter
  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon

Glaze

  • 4 oz cream cheese, softened
  • 1/4 cup salted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon pure maple syrup
  • 2–3 tablespoons milk or cream (adjust for consistency)

Directions:

  1. Activate the Yeast: In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let it sit 5–10 minutes until foamy.

  2. Mix the Dough: Stir in melted butter, sugar, eggs, and salt. Add 4 cups of Farm2Flour Einkorn flour and mix gently until a soft, sticky dough forms.

  3. → Avoid overmixing. Einkorn doesn’t need kneading to build structure. If using a stand mixer, use a dough hook and mix for 2-3 minutes max.

  4. Rest the Dough: Cover and let the dough rest for 15–20 minutes at room temperature. This allows Einkorn’s natural gluten to hydrate and develop.

  5. First Rise: Transfer the dough to a lightly greased bowl. Cover and let it rise in a warm place for 1–1½ hours, or until doubled.

  6. Prepare the Filling: Mix softened butter, brown sugar, and cinnamon until smooth and spreadable.

  7. Roll & Fill: Turn the dough onto a floured surface. Gently roll into a 15x20 inch rectangle. Spread the filling evenly, leaving a small border.

  8. Shape & Slice: Roll up tightly from the long side and pinch the seam. Slice into 12 even rolls using a sharp knife or floss.

  9. Second Rise: Place the rolls in a greased 9x13 baking dish. Cover and let rise for 30–45 minutes.

  10. Optional — Add Cream: if using, pour warm cream gently over the risen rolls before baking — this gives them extra softness.

  11. Bake: Preheat oven to 350°F. Bake for 25–30 minutes, or until lightly golden on top.

  12. Make the Glaze: Beat cream cheese and butter until smooth. Add powdered sugar, maple syrup, and enough milk or cream to reach your preferred consistency.

  13. Glaze & Serve: Spread glaze over warm rolls & serve.
