Ingredients
- 1¾ cups Farm2Flour Einkorn flour
- 1 tsp baking soda
- ½ tsp sea salt
- ½ tsp ground cinnamon
- ⅓ cup melted unsalted butter
- ⅓ cup light brown sugar
- 2 large eggs
- 3 ripe bananas, mashed (about 1½ cups)
- 1 tsp pure vanilla extract
- ½ cup chopped walnuts or chocolate chips (optional)
Directions:

Prep the pan & oven: Preheat your oven to 350°F (175°C). Grease a 9×5” loaf pan and line it with parchment paper for easy removal.
- Mix dry ingredients: In a bowl, whisk together the Einkorn flour, baking soda, salt, and cinnamon.
- Mix wet ingredients: In another bowl, whisk the melted butter and brown sugar, then add the eggs, mashed bananas, and vanilla until smooth.

Combine: add the dry ingredients into the wet mixture, but don’t overmix. Fold in walnuts or chocolate chips if using.

Bake: Pour batter into prepared pan and smooth the top. Bake 50–60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool & enjoy: Let cool in the pan 10–15 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.

- Do not overmix: Einkorn flour is more delicate — overmixing can make the bread dense.
