Einkorn Banana Bread

This Einkorn Banana Bread elevates a classic with fresh, Organic Einkorn Flour delivering a warm, nutty flavor that’s not just delicious — it’s irresistible.

Ingredients

  • 1¾ cups Farm2Flour Einkorn flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  • ½ tsp ground cinnamon
  • ⅓ cup melted unsalted butter
  • ⅓ cup light brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed (about 1½ cups)
  • 1 tsp pure vanilla extract
  • ½ cup chopped walnuts or chocolate chips (optional)

Directions:

  1. Prep the pan & oven: Preheat your oven to 350°F (175°C). Grease a 9×5” loaf pan and line it with parchment paper for easy removal.

  2. Mix dry ingredients: In a bowl, whisk together the Einkorn flour, baking soda, salt, and cinnamon.

  3. Mix wet ingredients: In another bowl, whisk the melted butter and brown sugar, then add the eggs, mashed bananas, and vanilla until smooth.

  4. Combine: add the dry ingredients into the wet mixture, but don’t overmix. Fold in walnuts or chocolate chips if using.

  5. Bake: Pour batter into prepared pan and smooth the top. Bake 50–60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.

  6. Cool & enjoy: Let cool in the pan 10–15 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.

  • Do not overmix: Einkorn flour is more delicate — overmixing can make the bread dense.
  • Ripe bananas only: The riper, the sweeter and more flavorful.
